I am planning on installing BL 6.0.0 on a Microsoft Surface Pro 1. I'm wondering if I can expect any issues with touchscreen capabilities.

Bodhi is not optimized for touchscreen, but is functional. Depending what exactly you expect will determine if that's an issue for you or not. Boot live and see if its good enough for ya. (For the record I don't have any touchscreen monitors or fancy new laptops etc so never tried it myself).

As an update of sorts on this. I installed BL 6.0.0 on a Microsoft Surface Pro 1 and touchscreen and everything including cameras work great. I don't have the pen, so don't know about that.
Only one problem, I can't copy and paste with touchscreen. I have to use a mouse for that. This is a bit of a problem as I would like to work remotely with this device, like sitting in a park and working. If anybody has thoughts about this, I would certainly appreciate it.

You can install one of the virtual keyboards for linux. For example florence or onboard. They should be available in repository...

I thought longpress usually behaved as right click? That might work, give it a try...
If not, you could use keyboard, most apps copy/paste with Ctrl+c/Ctrl+v, and those that dont (like terminals who use ctrl-c for cancel) usually use ctrl+shift+c and ctrl+shift+v/shift-insert.
