I tend to use a browser like chromium to view pdfs. Though there is also okular, atril, adobe reader, to name a few. Strange that evince doesn’t show up in your applications though. Have you tried opening it via the terminal, by typing evince and pressing enter. One way of checking it’s actually installed.
I wanted to read "Bodhi Linux 6 The Complete Guide for Beginners" by Roger Carter. I finally opened Evince via the terminal. Now it has shown up in the applications - graphics menu, as "document viewer"
Yes, evince is a docoument viewer but desktop file is really called evince. Anyway, I am a quick launcher addict (run everything tool) which you can open with ALT ESC or WIN Space or from the main menu. Then you can type "evince" in search box and look up the application. The quick launcher has an ability to search in generic names as well as in desktop app names.
